NICHOLASVILLE – If people have heard of Alltech Inc., they probably know it through the company’s Kentucky Ale made in Lexington.

But Alltech is a lot more than beer.

Its big business is the manufacture of all-natural yeast supplements that help cattle, swine and chickens digest their food better — so they, in turn, can become healthier food for people. Alltech’s future is animal nutrigenomics, the science of tailoring nutrition to genetic makeup. It’s a company with $300 million in annual revenue — and aims to become a $1 billion company in the next five years. For comparison, Lexmark reported $5.2 billion in annual revenue last year.
